Pastry-Bread Chef

Location:   Venice, CA
Type:   Full-Time, Weekends, and Holidays as Needed
Salary Range: 75 ,000.00 – 85,000.00 per year (DOE)

Position Summary

We are seeking a Pastry & Bread Chef to lead our pastry production program across Gjusta and other Gjelina Group concepts. This role requires a creative, detail-oriented leader with a passion for scratch baking, seasonal menu development, and team mentorship.

Essential Duties & Responsibilities

• Lead daily pastry and bread production, including artisan loaves, and desserts

• Develop and test seasonal recipes and innovative menu items

• Train, coach, and supervise a team of pastry cooks and bakers

• Ensure consistency, quality, and presentation across all pastry and bread items

• Collaborate with culinary leadership on production scheduling and kitchen coordination

• Manage ingredient sourcing, inventory, food costing, and waste reduction

• Maintain recipe documentation and par levels using FlexiBake software

• Oversee kitchen administrative duties including ordering, payroll input, and labor tracking

• Uphold kitchen cleanliness, food safety, and operational efficiency standards

Qualifications

• Minimum 5 years of professional pastry and bread experience, including leadership roles

• Proficiency in laminated doughs, fermented breads, and pastry fundamentals

• Strong organizational, time management, and communication skills

• Commitment to sustainability and responsible sourcing practices

• Experience managing high-volume production in a fast-paced kitchen environment

• Working knowledge of bakery software (FlexiBake preferred)

• Flexible schedule, including early mornings, weekends, and holidays as needed.

• Spanish (Preferred)
